Quinoa Vegetable Salad

You’ve probably heard the term “gluten-free” by now, but if you haven’t – no worries, we are here to help you become more informed. Gluten is a substance present in cereal grains, especially wheat and it is responsible for the elastic texture of dough.

Today we are going to give you an amazing gluten-free Quinoa Vegetable Salad recipe.

Gluten-Free Quinoa Vegetable Salad

Ingredients
1 cup uncooked quinoa
2 tablespoons fresh lemon juice
2 tablespoons olive oil
2 tablespoons chopped fresh basil
1 can (15 oz) gluten-free garbanzo beans, drained, rinsed
1 can (15.25 oz) gluten-free whole kernel sweet corn, drained
1 can (14.5 oz) gluten-free diced tomatoes, drained
1 cup chopped red bell pepper
1/3 cup quartered pitted kalamata olives
1/2 cup crumbled gluten-free feta cheese (you can omit this if you don?t want dairy)

1. Cook quinoa as directed on the package (usually 2 cups of water for 1 cup of quinoa).

2. Meanwhile, in a bowl, mix lemon juice, olive oil and basil. This will be your dressing.

3. In another bowl, gently toss the cooked quinoa, beans, corn, tomatoes, chopped bell pepper and olives. Pour dressing over the quinoa mixture.

4. Just before serving, sprinkle with cheese (optional). Garnish with basil leaves if desired.

5. Enjoy

I believe it is good to stay away from gluten even if you don’t necessarily have any of these conditions. I find that when I eat foods that contain gluten it makes me less alert, laggy, tired and often times it gives me horrible stomach pains. You can check out more recipes like this one here.
